You have choice at Saboten between tenderloin with less fat and the whiter, firmer loin, which makes the good cut for conventional Tonkatsu dishes. Specially-bred mature pigs and barley-fed come together to create a pork product that’s a bit sweeter and tenderer than you might find anywhere else. The stylishly-appointed Saboten in Tsimshatsui showcases the love for traditional Japanese architectural style that draws on the red, wood colors and hemp rope curtain to set the tone. Guest may sit back and relax on the earth-tone sofa and booth seats while overlooking the dynamic city life through glass windows; or simply enjoy the intimacy and spaciousness inside the semi-private room meticulously zoned by the rope curtain.
